Considered the ‘Marmite’ of breakfasts by some, porridge is usually brandished as a ‘Plain Jane’ dish, but here’s how you can transform something bland into a vibrant and colourful breakfast bowl:

 

Ingredients                                                                                                            

Dried orange peel – 20g

Dried black cardamon – 5g

2 cups of porridge oats

3-4 cups of milk/water (your preference)

Pinch of salt

 

Quick Prep Instructions (Prep time: 4-5 mins – using microwave)

  • Put 2 cups of porridge oats into a ceramic bowl
  • Pour 3-4 cups of milk/water and sprinkle in a pinch of salt
  • Add the dried orange peel and black cardamon on top of the porridge
  • Place the porridge in the microwave for 3 minutes on the appropriate setting
  • Once this has finished, remove carefully (very hot)
  • For a slightly sweeter palette, add 1 tablespoon of honey
  • Enjoy!

 

On the Hob Instructions (Prep time: 7-8 mins – using saucepan)

  • Put 2 cups of porridge oats in a saucepan
  • Pour 3-4 cups of milk/water and sprinkle in a pinch salt
  • Boil together for roughly 4-5 minutes, stir throughout so it doesn’t stick to the saucepan
  • Once the porridge has thickened, add the dried orange peel and black cardamon into the pan
  • Mix the ingredients together and then remove the saucepan from the heat
  • Place the porridge into a bowl
  • For a slightly sweeter palette, add 1 tablespoon of honey
  • Enjoy!

Ingredients

Dried dogwood fruit – 10g

3-4 cups of milk (your preference)

Coconut oil – 1 tsp

Plain honey – 2 tbsp

Vanilla extract – 1 tsp

Pinch of salt

 

Instructions (Prep time: 5-10 mins)

  • Mix the plain rolled oats and milk together
  • Add the coconut oil, honey, vanilla extract and pinch of salt, then stir
  • Add the dried apricot seeds, dogwood fruit and hawthorn berries into the mixture
  • Place in the microwave for 2 minutes on the appropriate setting

Ingredients       

2 big jujube dates

Dried longan fruit – 10g

Dried goji berries – 10g

Plain rolled oats – 300g

3-4 cups of water/milk (your preference)

Pinch of salt

 

Instructions for cooking on the hob (Prep time: 5-10 mins)

  • Add a pinch of salt to the water/milk, and bring to the boil over a medium to high heat
  • Stir in the plain rolled oats, then reduce the heat to low
  • Let the mixture simmer for around 5 minutes, allowing the liquid and oat to absorb (stir gently throughout)
  • Add in the big jujube dates, logan fruit and goji berries and mix
  • Once completely mixed, remove from the boil and rest for 1 minute
  • Serve and enjoy!

  • Add a pinch of salt to the water/milk, and stir in the plain rolled oats in a ceramic bowl

Making this dish is going to require a few extra ingredients, but we promise you it’ll be well worth the work! Ideal for those looking to prepare a large batch of Red Bean Congee for a few days. Here’s how to whip it up:

 

Ingredients       

Dried adzuki beans – 10g

Dried lotus seeds – 10g

½ cup of sweet rice

½ cup of rock candy/sugar

8 cups of water

 

Instructions (Prep time: 10 mins – Simmer and Soak time: 4 hours)

  • Wash and drain the red adzuki beans and lotus seeds
  • Bring the 8 cups of water in a large pot to boil
  • Add the red adzuki beans and lotus seeds and mix
  • Simmer for between 2-3 hours, stirring occasionally until the beans start to separate/fall apart
  • Wash the sweet rice and add to the pot, then simmer for another hour while stirring occasionally
  • Once the beans have disintegrated into a soup-like texture, remove from the heat and stir in the rock sugar
  • Let the mixture cool to room temperature, then place in the fridge until fully chilled
  • Once chilled, serve and enjoy!

 

What’s special about Red Adzuki Beans and Lotus Seeds?

Being known for their rich nutrient content, Dried Adzuki Beans (Chi Xiao Dou) provide you with high levels of protein and manganese. They are beneficial for aiding weight loss, improving digestion health, plus fighting diabetes and heart disease. Easily adaptable to be used as a red paste, this ingredient can be used in several different dishes, such as soups, desserts and as a dim sum filling. In Asian countries, these beans are cooked to make a chocolate-alternative paste which is used to make cakes and desserts (sounds heavenly).

The vitamin kings of the Chinese herbal world, Dried Lotus Seeds (Bai Lian Zi) contain high levels of protein, carbohydrates and vitamins A, B, C and E. Ingredients       

3 beaten eggs

1 tsp sunflower oil

1 tsp butter

Dried mushroom of your choice – 10g

Pinch of salt

 

Instructions (Prep time: 10 mins)

  • Season the 3 beaten eggs with a pinch of salt
  • Heat the sunflower oil and butter in a frying pan over a medium-low heat until melted
  • Pour the eggs into the pan and allow them to cover the pan surface
  • Cook the mixture for roughly 30 seconds, then make a line in the middle of the mix
  • Repeat once or twice more to allow the egg mixture to set
  • Fill the omelette mix with your choice of dried mushroom (our fave is Snow Fungus)
  • Fold in half gently once the omelette has been filled
  • Remove from the heat once thoroughly cooked
  • Enjoy!

Right – enough of us teasing you with the Jujube’s life story – let’s get to the real fun…

How to Make the Perfect Jujube Date Pancake

Ingredients

– 2 cups all-purpose flour

– 3/4 cup of boiling water

– 3 tablespoons sesame oil

– 2 tablespoons vegetable oil (for frying)

– 1 cup of Jujube Dates

[Optional for a sweeter tooth] – 2 tablespoons of sugar

Method

1) Sift the flour into a bowl. Add 1/2 cup of boiling water and stir.

2) Knead the warm dough until it is smooth, then add the remaining 1/4 cup of water if necessary.

3) Cover the dough and rest for 30 mins

4) Place the rested dough on a flat surface and cut in half. Roll out until it is roughly 1/4 inch-thick.

5) Use a cookie cutter to cut out 3-inch circles of dough.

6) Brush the sesame oil over the top of 2 dough circles, then lay them on top of each other (with the oil sides together)

7) Roll out the dough to form a 6-inch pancake, then repeat to make the rest of the 3-inch dough circles.

8) Heat a frying pan over a low heat, then add one of the paired pancakes and cook until brown on both sides (approx. 3 minutes together)

9) Remove from the heat and pull the pancakes apart. Do the same with the remainder of your pancakes. Cool for a minute or two.

10) Heat 2 tablespoons of vegetable oil over a medium-high heat. Crush down and spread the Jujube Dates over the unbrowned surface of the pancakes.

11) Roll the pancakes over 2 to 3 times, to form a flat roll. Brown the pancakes in the pan on both sides

12) Dust the pancakes with sugar (if required).

13) Serve and enjoy!

How to Make the Perfect Black Sesame Seed Smoothie

Ingredients

– 250ml milk of your choice (we’re going with soya milk)

– 1 tbsp grounded flaxseed

– 1 tsp maca powder (optional)

– Pinch of ground cinnamon

– 1 date (stoned)

– 1 small ripe banana

– Handful of spinach

– 1 tbsp of butter

– Handful of black sesame seeds

Method

1) Pour the milk into a blender and add the ground flaxseed, maca powder, and cinnamon

2) Add the remaining ingredients then mix until smooth

3) Pour into a glass, then add the Black Sesame Seeds on top

4) Enjoy!

1) Finely chop the leek. Rinse the mushrooms and leave them to drain in a colander

2) Place a pan on a medium heat and bring to a boil. Mix in the Dashi stock

4) Lower the heat and add the miso to thicken the soup

5) Once thickened, remove from the heat and leave to stand for 1 minute

6) Serve and enjoy!

How to Make the Perfect Steamed Chicken in Dang Gui Sauce

Ingredients

– 40g of ginger

– 500g of chicken with skin and bone (cut into 3cm pieces)

– 30g rice (of your choice)

– 20g soy sauce

– 5 slices of Dang Gui

– 1/4 tsp sesame oil

– 1 tsp salt

– 800g of water

– 10 jujube dates (optional)

Method

1) Place ginger in a mixing bowl and chop finely

2) Transfer this mix into a small sieve

3) Place chicken and rest of ingredients into a pot fitted with steamer basket over water

4) Bring water to the boil, until the chicken juices run clear (30 mins)

5) Let the mixture stand for a couple of minutes then remove

6) Serve and enjoy!

What Makes Black Plum Special?

Belonging to the same family as peaches, apricots and nectarines, Black Plums are the more diverse fruit of the family.

They make great additions to most salads or desserts due to being high in Vitamin C, but the sweetest part of this ingredient is how it can benefit your health.

Known to help stop coughing, alleviate thirst and pain, prevent diarrhoea, stop bleeding and treating corns/warts, this is a key health boosting fruit you need to try!

How to Make the Perfect Black Plum Pie

Ingredients

– 2 unbaked pie crusts

– 1/2 cup of sugar

– 2 tbsp flour

– 1 tsp cinnamon

– 1 tbsp butter

– 500g of dried black plums

Method

1) Preheat oven to 450 degrees (Gas Mark 8)

2) Place one pie crust into a 9 inch pie dish, then wash the plums

3) Cut plums in half (removing pit), then into quarters

4) Arrange plums evenly in the pie crust

5) Mix together dry ingredients then sprinkle over the top of the plums

6) Slightly glaze the mix with butter

7) Place top crust over the plums, then trim the crust to fit the edge

8) Cut around 6 slits into the top of the pie

9) Bake at 450 degrees for 12 minutes, then reduce the heat to 325 degrees (Gas Mark 3) for a further 25 minutes

10) Check after time elapsed – if plums are tender you’re good to go

11) Serve and enjoy, warm or cold!
